Rhubarb Salsa

This will be my last post about rhubarb! This was the finale of the amazing collection of stocks that my Nanny gave me. My final creation was Rhubarb Salsa! It's incredibly zesty and spicy dish perfect for an appetizer.

Rhubarb Salsa

It's not much to look at but the zesty taste is unique and addictive!

INGREDIENTS

1 cup rhubarb

1/4 red bell pepper, chopped

1/4 green bell pepper, chopped

1/4 cup fresh cilantro, chopped

1 green onion stock, chopped

1/2 jalapeno (or a whole one if you love spicy)

1 tbsp lime juice

1 tbsp brown sugar

salt and pepper to taste

STEPS

  1. Take the rhubarb and blanch.

  2. To blanch rhubarb, you will place it in boiling water for 10-15 seconds

  3. Immediately remove from heat and let cool for 1 min

  4. Add remaining ingredient and rhubarb into a food processor and pulse a couple of times until all the pieces are blended and chopped together.

  5. Allow salsa to sit in the fridge for at least an hour to let the flavors set in.

  6. Enjoy!

2025 Addition: I still love the unique taste of this salsa every spring! A day in the kitchen to mess around with rhubarb recipes is like therapy to me.

Rhubarb is the first vegetable ready in the spring so it’s a symbol that the season is soon going to change to summer and we’ll soon be harvesting and eating fresh fruits and vegetables straight from the garden for months to come. <3

It’s been a cold spring which has been tough at times when all I want to do is be outside so here’s hoping the weather turns around as we slip into June.
